Cornbread (vegetarian, fat free, clean eating, high fiber)



Yummy served with chili!

preheat oven to 425*F

Ingredients:
  • 1 cup white whole wheat flour
  • 1 cup whole grain medium grind corn meal (bob's red mill)
  • 1 tbsp flax seed meal
  • 2 tbsp sugar (or honey or sweetener of choice)
  • 1 cup of soy milk
  • 3/4 cup of water ( or you can just do 1 3/4 cups of soy milk)
  • pinch of salt
  • 1 tsp baking powder
  • 1 tsp baking soda

1. lightly grease pan (you can use something like this):
2. Combine all ingredients and mix well.
3. Pour into pan.
4. bake for about 25 minutes until a tooth pick comes out clean from the center.
