Low fat Vegan granola

I LOVE granola.  I love it like is, but even just a little over some banana ice cream is FABULOUS!  Here is a recipe I am going to try!

Low fat Vegan granola

In a big bowl, mix together:
  • 6 cups of rolled oats (the old-fashioned kind, not quick oats)
  • 2 cups of chopped dried apricots, dates and/or prunes. (Use scissors to cut the fruit into small chunks. Oh and don't do raisins -- they burn. If you want to add them in, do so after the granola is cooked.)
  • 3/4 cup honey or maple syrup (warm the honey slightly to make it easier to mix in)
  • 1 tsp each vanilla and cinnamon
  • 1/4 tsp salt

Spread the mixture out on the biggest baking sheet you have, lined with parchment paper. (The parchment will help to keep it from sticking, since there's no oil in the recipe. If you don't have a baking sheet big enough, divide the mixture over two smaller ones.)

Bake in the centre of a 275°F oven for about 1 hour, stirring twice, until light golden. (If you're using two trays, bake on the top and bottom thirds of your oven and switch trays halfway through cooking.)

The granola won't seem crunchy at first, but when it cools down, it'll be crunch city.
